LDM Topic in Nurtition Class

This past semester I took a Nutrition class at LDM.  The class was named Topics in Nutrition and was taught by Marco.  Marco is a very fun, enthusiastic guy.  In his class we learn a lot about nutrition and the body with what foods we should eat and what’s better for us.  We also get to cook amazing dishes that I will be showing you in this post.  


Here is one of our first dishes we made.  This is called Petto di Pollo Al Caffe.  It is sautéed onions and peppers with chicken on top that has coffee grounds on it.

Next class we made Sgombro con Insalata di Finocchi ed Agrumi.  This was a fish dish.  We filleted mackerel and cooked it into cubes.  The we paired it with fennel and oranges.  I don’t like fish, but the fennel and oranges were very tasty.

This  next week we got to cook in the student kitchen that’s inside the Mercato Centrale.   The first dish we created was Spaghetti alla Chitarra con  Salsa al Pomodoro e Basilico.  I think this was one of my favorite things we made.  I definitely want ton recreate this at home with my family.

Next week we made Risotto Ai Frutti di Mare.  I don’t like fish but it wad fun to make and i had fun decorating the plate and making it pretty

Next week’s dish was another fish dish.  We made Tris Di Tartare Di Tonno.  I still don’t like fish.

Here we made Orzotto A,C,E.  This dish we made is basically just risotto but added to it is a special juice that contains lemons, oranges, and carrots.  It is called Orzotto A,C,E because it contains high amounts of Vitamin A, Vitamin C, and Vitamin E.  This tasted soooo good.  IMG_9495.jpg


The following week we had to leave the Mercato Centrale and go back to our kitchen in the LDM classroom.  We made something called Millefoglie con Salsa Alle Fragola.  This was a dessert dish!  It’s philo pastry with pistachio, walnut, agave, and riccotta cheese filling.  Topped off with caramelized strawberries.  We learned to layer this and it was very fun and delicious.

Next, of course another dish containing fish.  We made Calamari Ripieni su Pure al Nero di Seppia.  This was calamari stuffed with black ink mashed potatoes.  We filled the mashed potatoes into the squid and then used a toothpick to secure it and then fried it.  It looked very cool and was so fun to make!  I have never in my life seen black mashed potatoes.  IMG_9762.jpg


The last dish of the semester was another dessert.  This one called, Crostatina Di Frutta, is just a fruit tart.  We made the cookie with almond flour and an egg yolk cream.  It was very delicious this is again one of the dishes I want to make for my family.

This nutrition/cooking class taught me many techniques and recipes that I can use for the rest of my life.  I had so much fun and can’t wait to make some of these recipes for my friends and family once I’m home.
